Not sure what you / she means by timestamping a picture, but if she's using a camera that isn't a phone, it's trivial to change the time and date that a camera would print in the picture.

As for the timestamp, she will write out the exact date and time on a notepad, and take a selfie with that notepad. This to me has always been a reliable way to screen someone. It is something that could be done with Photoshop or AI, but the pictures come out without any traces of manipulation and they are original pics every time. Manipulating a written timestamp takes way more time, energy, or forethought than a lot of these ladies have. But AI will change this in a year or two once it can create more realistic looking photos.

My guess, which I hope I'm wrong, is that it's a robbery setup with a boyfriend. To me anyone without a few months of a post history and at least a review or two are "up to something" if she's looking that good.
