Apartments (GB / BP) are appointment by texting the number. Usually they will get you the girl you ask for but not always. AMPs (orange, perfect, etc) you can make an appointment with less of a chance of seeing who you want, or ring the bell and pick from who's available. I always ask "any other girl?" before taking who they give me.

Pretty much all the storefront parlors (and brothels) will take walk-ins. No spot is going to turn away a quick buck. The advantage to calling ahead is getting a specific provider or during busy times of the day. Even then, there's a 40-50% chance these places will take a walk-in even though they might be double booked. Again, they aren't turning away money. On the flip side, not having an appointment and doing a walk-in allows you to scope out the talent without any commitment. Meaning you can walk if you don't like what you see. Any time I visit a spa I've never been, I prefer to do a walk in for that exact reason. And don't be shy, ask if there are other girls if you don't like who answered the door. It's your money, you're the boss, haha. I've learned, over time, not to give af about hurting feelings when asking for someone else.
