I have experienced her flakiness as well. I don't think there is a silver bullet here, maybe when she hosts sometime to time you have a better chance. It sucks when you have to do hotel arrangements etc. etc. Last time for me she did cancel at the last minute on the same day despite confirming with her the night before (and she said yes). Luckily it wasn't all lost I arranged a meet with someone else at the last minute.
