I am certain they are when it comes to their own records. The books they keep which would be shown to any government agency does not contain that level of detail. It just makes sense to know who your customers are and their spending habits. If it worries anyone then you should never provide any personal information such as real name or phone number, and never use a credit card.

If you think any of these places are not keeping a record of what massages are being done you are kidding yourself. They are running a business and need to keep records of what massage is done, when, by what provider, and the tip received (boss does not alway record other providers cash tips). They need to know how much commission to pay each provider as well as how much the business actually makes. Same thing happened to me last time I was there at RL. The one doing the massage was not that good looking but at the end the sent in Iwa to finish so it wasn't all bad.
