    I have had the same need for a discrete hotel room that I can pay cash for. It turns out that many of the hotels, including the nice ones, do accept cash payments. Policies wary by location, the best way is to call the local number and ask. Most of them would like a credit card on file to lock the reservation. If you don't show up or cancel in time, they will charge the credit card.

    Many hotels would also like a credit card for incidental damages to the room. You can always use a Visa gift card that you can buy from a grocery store. I do like to call and make the reservation VS booking online it is quicker.
