Many (maybe even most. At least in my experience) providers will want payment up front. This will probably be an unpopular opinion, but think about this from their point of view: what guarantee do they have that a client will pay if she lets him wait until afterwards? A legal business has recourse if a client refuses to pay. If you try to leave a restaurant without paying, they can call the police. A repair shop could not let you take your car back if you don't pay. Businesses can take non-paying clients to court. A sex worker doesn't have that option.

Your examples are kinda flawed too. You pay afterwards at a sit-down restaurant because the total bill amount isn't known until after you're done eating (even after you've made your initial order, you might ask for something else midway through the meal that costs extra, you might order drinks, you might get dessert, etc). Same with an auto-repair shop. Don't know what the total cost is going to be until the repairs are done.

Now sure, some providers will allow paying afterwards, but asking for payment up front is definitely not a red flag in and of itself. There are many well-established and highly regarded providers who require payment up front and have never ripped anyone off (at least not that's been reported).

Paying up front (before she asks) tells the provider that you trust her and eases her worry about getting stiffed. Now you both can enjoy each other. Once you've developed that trust, it doesn't matter when you pay her, before or after. But I still always pay up front anyway. I only see women with proven track records of legitimate good service, so I've never had a problem. When I arrive, I leave the envelope in plain view. I can definitely understand the hesitance that some mongers might have when they're "TOFTT" and seeing a new provider with no info available. Not much to really say about that.
