I know for us (men) there's a setting where we can decide if we want the SBs to be able to see if we have viewed their profiles or not. This option is only available for paid members. It is likely that the SBs also have this option. You can also set whether SBs can see your online status / last active date and when you favorite someone.

I believe there is a switch that prevents others from seeing that you looked at their profile. But I've met with girls that haven't read my profile.

You can adjust your settings to where people can't see when you view them, when you favorite them. You can hide when you last logged on, you can hide / edit all types of activity so it's entirely possible she's got the setting set so you can't see when she viewed you.
