A burner / hobby phone only makes it more difficult for LE not impossible. There is an extensive digital footprint you leave behind and while I agree it is extremely unlikely, LE might be willing to go through the legal hoops of subpoenaing such information or worse yet obtaining the information illegally from friends in high places and then dealing with you outside of the legal system.
