I beg to differ with the statement about no one does this because they enjoy it. I have a collage education, management backround and no habits outside if craft beer. Some rules that I live by:

1) Never hand the money to someone until you are at the scene. The whole "wait here while I go. " No. Which leads to.

2) Don't let them out of your sight after you give them money unless it's hotel bathroom or something.
