Just wanted to throw a little intel out. Had a few dreams lately. One is located just north of that strip mall on Archer / Cermak. I've met both and even in Mandarin the dialects are so varied that even some Chinese can't understand each other unless they speak slowly. If they came from the North then it is almost always Mandarin but South, South East down the coast from Shanghai to Guangzhou it is often Cantonese. But most of the basics are similar.
