So, if those reviews convinced you that she was legit enough to call to your hotel, how does glimpsing a squad car change that fact?

First of all and for many reasons, cop cars are not an unusual sight around hotels. Also, LEO generally doesn't conduct a sting op by sending a girl to your hotel room and then busting in to arrest you. One reason that's true is because they have no idea who or what (weapons, etc.) is in the room and that presents an officer safety concern. Another reason they don't do it that way is because it would only result in a single misdemeanor arrest. It's much more efficient to run the sting the other way, by setting up a decoy provider in a room and arresting all the mongers who come to visit. Same expenditure of time and resources but resulting in multiple arrests rather than just one.

The bottom line is that it appears you got spooked by the squad car, which is understandable. But that's no reason to question Meredith's legitimacy.
