I think his point was that a providers service is generally always YMMV with some more YMMV than others. A mongers looks, cleanliness, and attitude helps. Can't control looks but can always control cleanliness and attitude. Weight can be controlled too BTW. Also I think everyone can agree that a mongers taste can differ from one to another.
