Being the curious sort I engaged them and found three distinct types:

1) An obviously fake person. Probably Pakistani. Telling me they're "in town" (won't say where) and asking for 1/2 up for for "my safety". Next.

2) This next one was rather impressive, again obviously NOT an escort. But doing the "Hey baby!" and "I'm so horny" etc. Then they start asking for money. Here's the thing. IT'S A BOT! It's actually a machine that analyzes your text and responds (semi) appropriately. I'm guessing enough guys fall for this to make this totally automated approach profitable.

3) And this one was down right scary. I contacted a girl via a phone app. Using a trash number. We talked and set specifics. Then she got mean and started making threats about calling my wife and how her boyfriend is a part of a columbian drug cartel. The next day, I was texted. From a different number - 10 pictures of what can only be described as gory drug-cartel style executions. Then the age-old threat of "we'll be at your home in 45 minutes unless you. ". I can TOTALLY see how this might frighten people. And maybe enough to actually cave. But I kept on. I replied with a picture of my AR-15. As if proving there's actually a human at the wheel here. They replied "obvious internet picture!" So now I know I'm dealing with a person. I asked "him?" exactly where it was they planned to meet me? No real reply. I then forwarded the address of the local constabulary and offered a time to meet. After a couple hours of horsing around they finally gave up.

People ask. Why do these bozos do this? The answer is obvious. BECAUSE IT WORKS! All we can do is either avoid them altogether. Their ads are OBVIOUS guys. Or two, if you want to have some free snickers. Engage them and waste their time. Eventually they'll see it's just not profitable.
