There are many sites and guides I've included above. If you want a summary of options, I will recap:

Introduction to Japan - Shop types
Maid cafe = No alcohol. Girls in costumes come and call you master and serve you curry and other simple dishes, etc. You can pay for a polaroid with them ("cheki") and play other games and activities. There are many variants based on them, often based on the type of costume. But the basic idea is the same. Very tame. I enjoyed but would not recommend

If you only speak English, go to Luxe first to learn the system. Or if you speak Japanese, I would recommend clubs in this order of quality:

Door Knocking
