I'd disagree with these not being scams, are they asking for money to be to them before meeting? If so, that's a big red flag. If they're looking to be paid for the first meeting (in person) that's less scammy, maybe they had some bad experiences. Usually, the way I've handled these is to say I'm going to pay for dinner and drinks, and we'll talk and if we're comfortable, I'm open to taking things further.

If she really wants a cash gift I'd keep under $100 dollars, it's not a lot of money to you, but to a student, it might give her an incentive to keep you (and your wallet) in her life.
