Honestly, it is patience and a willingness to be upfront with them. Easiest thing to do is watch what is going on. The girls to go for are the ones that are always going to VIP. Watch their customers. If they make a path to the men's room or the parking lot, chances are extras were had. Either cleanup or leaving satisfied.

Also, read this forum. You will quickly realize who the scammers are and who the rock stars are. I tend to do a lot of toftt VIP.
