It's my understanding, and I may be wrong, that you can hide someone unless you've already looked at their profile, or exchanged a message with them. Otherwise, They can't see your profile.

If you've exchanged a message, or viewed their profile, you need to block them. If you block them, your profile will not appear, and they'll see a message that you've deactivated your profile or blocked them, it won't say you definitely blocked them. If they have the app, it will tell them they've been blocked.
