For those of you who have been in the game for a while as I have been for about 4 or 5 years. How can you avoid getting ripped off like this? I don't think there's a lot you can do, really. I mean, you basically have 3 options.

1) Consider it a lesson learned and accept the loss. I think this is the most common and safest option.

2) Try to negotiate a portion of the dough back. I don't see this happening with a high success rate unless you're a crack negotiator.

3) Try to snatch back the donation. This could get ugly and is laden with risk.

I guess in this scenario, the best defense is the best offense. So, I'd say, do as much preparation as possible. Research, only deal with positively reviewed providers, negotiate service before payment, bail if you get a bad feeling.
