You should definitely build a rapport with whoever you're going to do this with beforehand. I've done it, but only with one that I was seeing for a while. We would occasionally text about non-work stuff, but there should still be a client / worker relationship boundary. I wouldn't want to be locked in a room for 8+ hours with someone I'd just met.
