For the trouble, I would just purchase an Uber gift card for the SB. Either online and have it e-mailed directly to her. Or from a local grocery store, paying cash, and give her the codes off it so she can use it herself.
If you still want to pursue your method. Only your first name will be shown to the Uber driver, so there are no worries there. However, in the small chance your Uber driver gets into a fender bender and the SB is in the car, I can imagine a headache brewing that's not worth it. For instance, Uber makes the passengers involved in an accident with one of their drivers fill out all types of paperwork. I can imagine this claims process would then link your real info to the SB.
Not trying to fear monger, but when in doubt just purchase them the gift card and let her have everything in her name. Attaching what questions uber sends the passenger involved in an accident with their driver.

As far as I know, when you order an Uber, the driver sees your name. I don't know if it's the full name or just your first name, as I've never driven for them. If you do it all through your Uber app and don't share the ride with her, then you'll have to tell her the type of car coming to pick her up and the driver's name, so she'll know what car to get into. The app doesn't know whether you're the one getting into the car or not, it just knows the pickup and drop-off locations and the name of the person ordering it. When she goes to get into the car, the driver might say, "Are you 'CuriousInaquir' especially if you have a masculine name. But most drivers wouldn't care who's getting in and would probably just confirm the drop-off location with her. As long as you keep it all on your app and don't choose the split fare option or whatever it's called, then she shouldn't see anything about you on her app.

When you order an Uber on your app to send a car to pick up someone else, does the rider get to learn the name of the person who ordered and is paying for the Uber ride?
Seeing my first name would be fine. I'm really concerned about whether the rider/sugar baby would be able to see my last name.
