If you're talking about deleting "voicemails", "text messages", or "call histories" then you go to the top left icon and select it. You'll see something that has the following options:

Inbox, Starred, History, Voicemail, Text, Placed, Received, Missed, & Trash.

Go to "Text" (for example) and from there you can delete them.

I think it really just moves it to the Trash.

Then go into the "Trash" and I think you can remove it all from there.

So that should remove those records on your device. But remember, Google still has it. What happens on the web. Remains in the web (as in "does not get deleted and is available to share with someone with a warrant. ".

I agree with you about name changes mostly being due to bad things, such as trying to escape bad reviews, and I also tend to avoid. But there are sometimes good and valid reason for name changes.
