Why not just get a TracFone you can get a decent one for like $49 and you don't have to put any info in it.

Then the phone is locked into the carrier. Its only cheaper on the front end and the pay out on back end ends up eating any savings up in a few months of service with Tracfone. Tracfone is an MVNO so while also being locked into that phone service you are also at the mercy of their contracts with their network providers. I get more options with an unlocked phone that supports everything I could want to do and I can get a SIm for tracphone use it pop it out in a month then go and get a Sim for a diferent provider the next month and start fresh. I can do factory hard resets and / or completely reflash the firmware on the Moto E to wipe the data. Those options are limited with a locked phone.

I've investigated phones too. Super cheap but servicable burner smart phone that will work is RCA Reno off amazon for 70 but you'll get limited coverage in some areas with most carriers as it doesn't have the best range of 4 G bands and is only GSM network compatible. The RENO is also a dual SIM phone so you could use two carriers, just requires a reboot of the phone to switch between SIMs.

The best option right now for price point and functionality looks like the Motorola Moto E (2020)(Model: XT2052-1) . Its a 4 G smart phone with wifi calling / VoLTE and the unlocked USA version support GSM and CDMA carriers with a large range of bands for good coverage with most carriers no matter which bands they use in an area. Its 120 off amazon. That stings a little but way less than losing a 300 to 600 dollar phone while hobbying and it will run pretty much everything you might want for communication / social networking / commuting purposes.

I looked at Burner apps and Google voice and they are OK if you calling / texting directly with another person but many apps and websites block VoIP numbers to sign up and / or use their service / platform.

I'm still investigating whether VISA Vanilla giftcards can be used to buy service through Mint but otherwise just do cash transactions for cell service cards at walmart / walgreens / target. I'm also investigating privacy dot coms virtual credit / atm cards linked to a checking account that lets you set a charge limit and you can cancel or disable it after signing up for a site or service and they can't bill you dry with recurring billing and impossible to cancel memberships.

Cool! Didn't know they had them on amazon. For phones, I just went to the local pawn shops; got a samsumg s5 for 50 bucks a while back; a bit slow, but does the job. Those visacards do work, but got to be careful with all the fees they get you with.
