First of all, if the provider doesn't explicitly ask for references, I don't offer them. I just introduce myself and make it clear that if she needs more information, she is welcome to ask.

If she asks for references but doesn't say how many, I give her one and make sure it's someone who is good about answering requests. I give the name and a way to contact the person, whether by phone or email.

If she asks for two references, I give two.

If she asks for more than two, I move on. But this hasn't happened yet.

I've found that many escorts don't insist on references, and don't check them even when you offer them. But that might be because I'm willing to reveal quite a lot about myself in my introduction. If you are more secretive, you can probably expect more requests for references.
