After trying a few different spots I got close at 9 VIP but after being denied figured that I'd need to offer more for Greek and didn't have any more cash on me. Anyone have advice on where / who to ask for and how much extra to put up? Please PM me if you're willing to share info.

I'd see if I know or like any of the providers at one over the other and choose based on that. Both are top notch.

Just watch for the few sections that are signed "no parking". I could imagine it being more sketchy at night because it's like rundown light industrial (place is over a wholesale fish place!) but during the day it makes it really discrete.
I've been to 9 VIP a bunch and A1 once. I had a good experience at the latter. Issue with A1 at night is there's a lot of homeless camped out around the convention center.
