If it goes over I don't say anything and if they try to ask for more $ because it went over I play dumb and say that it's not my responsibility to watch the clock.

If she's doesn't warn you, yeah, she should have told you, and you might have guessed it, but unless you asked her for an extra 15 minutes, it's fair to assume that she gave you the extra time in the name of customer service and wanting you to leave satisfied and return again as a regular client.
