I was annoyed that it isn't as easy as it used to be to add a girl to my contacts on GV on my Android phone. You have to go into People and then click a little headshot icon. However, this is paying dividends online. I access GV at home through a webpage, and now, the contact name I have given a girl on my phone is showing up there, rather than just the number, like it used to be.

Nutshell. SO cannot without court order obtain records (as mentioned by someone else you'd have to be in the proceedings for divorce and denied relations under oath to get it legally). In MOST cases they log in to a shared account and / or account access. Arguably if they modify something or you didn't give them access (separate accounts) there are nefarious means as outlined in the article to follow ya. And that's really about how crazy you think your SO is willing to go.
That said, if your concern is LE. Basically one phone call to your service provider and they can trace you. Not as easy as on procedural dramas (they're technically violating a number of laws) but a form faxed or e-mailed or even a phone call gets them what they need with minimal effort. Most don't even need a warrant. Unless they're dotting the I's for the info cause your the main suspect and this info is key to the case. And they still may inadvertently be tracking you if they have a Stingray running for another case.
As you mentioned. If you want to show pictures, move some over to an account in the most anonymous way possible, probably offline if possible. If you really want no fingerprints on the burner. Take a picture of the picture on a big display / computer. Remember data tracks from your phone to an account upload then to your burner ruins the anonymity of the burner. And at this point, I'm assuming you know how to get rid of geolocation tags on your pics if you do get them there.
Advice needed in dealing with a Blackmail
This is the text I received when I told the blackmailer that I don't pay for online media:
I'll legit fuck your world up. You know you're the one paying for sex and soliciting prostitution right *****?
I will call your job, your wife, your family. I will destroy you.
Text me again you're going to have to send me 1 k to keep my mouth shut *****. Don't text my phone again or your life's done.
It's so easy to track who you idiots are even with a texting app. Don't you know I can search your picture and find out everything about you by you're one ugly ass picture.
Obviously, the seeking profile was deleted.
My issue is, this blackmailer is going to create more fake profiles and try to trap other people. How do we bury this blackmailer?
