Knife is too dangerous and could be turned on you, while firearm would likely give you consequences when you might wish you were dead.

You don't have to use pepper spray but if you were to use it the guy's size should be relatively irrelevant. No courts involved too.

Best way out however still remains giving them the money and just walking away.

It's disabling for a moment because of that, allowing you to get away or overcome your adversary. But if someone knows it's coming, they can steel themselves for it and the effect is mitigated.
