That was my first thought; leverage for getting out of trouble. Otherwise, why save information without first establishing an ongoing relationship and the permission to do so. I had only seen her once.
I have had times in the past where a provider and I had a regular occuring thing, and they had my "information". But I was always asked. That was South Florida though, and the rules, pricing, and quality are much different down there.
My advice is for everyone to switch lines regularly, use a psudonym, and don't give out any other information that could identify you.

Any phone bought in the last decade will keep a list of every number that's called it, and they all have pretty much unlimited phone book space, too. I dunno about you guys, but if I had 1000 girls calling me, I couldn't remember who they were by just their numbers, so I'm pretty sure I'd put their names (or, rather, their working names) in there to keep track. If she's not the crackhead type who loses or gets her phone stolen every 4 days, she'll probably just keep call history in there. When I've switched phones / SIM cards / numbers and I reach out to a girl that I've seen before and want to let them know roughly who I am so my previous good behavior is rewarded, I let them know.
Then again, when I tried that with this one girl, she had no idea who I was, but set up the dream anyways. She didn't recognize me when I got there until I took off my pants, she saw my dick and said "oh yeah, NOW I remember you!" Felt good, man.
Anyways, I've posted before about this: If you have a monger phone that's been turned on near your home, your place of business, your non-monger phone, your vehicle with OnStar or other built-in GPS, or anything else like that, you have done something that's suspicious enough to be looked into if someone cares. Usually, nobody gives a shit. Of course, divorce lawyers and the like usually care more than LEO, but sometimes LEO likes to look like they're doing something "about the problem" (or they're already looking at you for other reasons) and they give a shit.
Any text you send, unless you're one of the very very few who actually know what they're doing, is going to be as private as a postcard, readable by every cell tower, nosy snooping person at the phone company, bozo with electronics in his house and a little too much free time, cop with fake cell tower that they periodically deploy (and get pissy about admitting to it, even when the courts try to make them admit it), etc.
Same goes for email, although it takes a little more effort for someone else to read than texts.
There are some people who've been in the national news recently who thought that WhatsApp was private enough to cover their crimes. They're in prison now.
I agree that writing down license plate numbers and storing them with a monger's name / phone number isn't cool, but it doesn't take much money these days to set up a camera that's small enough to be effectively invisible, and there are some mongers out there that dangerous for the girls (including guys who rip off, rob, and beat them up), so I could understand why they're worried about their safety.
Use your spidey sense, minimize your exposure, prefer to visit ladies with good reputations, actually burn your burner phones periodically, and you'll be less likely to have a problem. But you're still exposing yourself to risk until the puritans (or hypocritical pretend puritans) lose at the ballot box and adults are allowed to have adult fun legally in this country.
