A grilled cheese sandwich is a "pan fried" AKA "grilled" sandwhich with the cheese between two slices of usually, but not always, buttered bread. That's what makes the "crusty bread. " A toasted cheese is usually, but not always, an open face sandwhich with the cheese on top of the single slice of unbuttered bread. The method of "toasting" varies but is done in a oven or broiling to melt the cheese. A variation is to add another slice of unbuttered bread on top once the cheese starts to melt. Another variation of toasted cheese would be to use a press but then that would be more of a panini.
