It helps in case of theft, robbery or maliciousness against the shop or its staff. I've seen them successfully used to catch a thief who stole a foolish provider's iPhone 6 left at the front counter by mistake. The video combined with the thief's credit card info nabbed him. It's also used for internal briefing. All you mongers who skip out without tipping or low-ball the provider with a lower than standard tip are caught on video. Smart houses will show it to entire staff. Cheap tippers, if I were you, I wouldn't go back to that shop. They may have your face posted in their break room.

Unless your are a " Person of interest" who may be involved in a more nefarious, (robbery violence or worse) crime, I wouldn't worry too much about the cameras.

In order to invade your privacy to that degree, LE would need a specific warrant for you (and not just the message place). Not that they would not keep the film for their own investigation, but the evidence of you on film in a message place would be inadmissible against you personally per se. That is why bust of message polar Johns are done while they are "in the act" when LE gets a warrant for a raid, and not by filming you going in to the message polar and busting you by hidden camera.
Of course, the evidence would be admissible if they suspected you of robbing the place, so if you are unlucky enough to be at the place in a time period as when a robbery went down, then you may receive a knock on the door at your home for the investigation in front of your wife and kids. This would make you a slightly unlucky person, but more lucky than the guy who gets busted in the act during a raid. The Camera evidence would then become admissible to establish your time, place, and opportunity to commit the robbery (but not to commit a sex act).
