Many of the same business and marketing principles used in "legit businesses" can can also be applied to sex work. I can't speak for anyone else, but I have to deal with the same kinds of issues a self employed family member does. While having a back up plan is good I don't think that anyone who is perfectly fine doing this is willing to forgo going from making hundreds in a day to $10-$15 an hour. Most of us net the same amount of money as an average college graduate does. Some even make as much as a doctor or stock broker. It would be quite a step down to go and get a normal job.

First, there's always the "not the average". I think MZ fits into that category. The average BP girl isn't going to be on a message board having intellectual debates with a bunch of mongers while still having the ability to manage her time to work. Even then you have to compete with all the other graduates for the same pool of jobs when you have little to no experience in your field and pay off massive student loans. Most I know with a non STEM degree work in another field that's not even related to what they go to school for. It may be rare but some sex workers do save and start their own businesses or invest. It's sad that a bachelor's degree is the new high school diploma but that's what happens when college is pushed down everyone's throats and manufacturing jobs are moved to another country.
