When texting, they have an easier time to upcharge. When you get there, they might be looking for that next high and be more willing to give a little extra. But, you may also get there and have 2nd thoughts about going raw. Things might stink down there.

Also, I wouldn't over-think the pay-before or pay-after. If they ask you to pay upfront (when you get there), that's your spot to ask about extras (if you want them). If you ask for in texts you just open yourself to paying more.
