Age vs. Value is a subjective opinion

Hell, when it comes to service, I've found age is less telling than their allowance ask. The more expensive they are, the more entitled they believe themselves to be, and the worse the sex often is. I've had great experiences with older and younger. I've never had a great experience from someone charging over 400.

The odds of them having GPS and entitled is very high. I don't hunt down just any 30+, I go for a very particular standard, in shape, well put together with a body some 20 something would envy. They aren't entitled as often (not always, I'll admit). They may have been burned by a guy or two and take a little extra finesing to woo them. But the outcome is generally they love sex and the dirtier the better. Now, if we are talking average kinda in shape mid 30's soccer mom. Yeah I'd say their ppm should be lower. But if she presents herself as the absolute best version of herself I'm perfectly willing to give her the same as a 23 yr old bikini model, and I'll have more fun for a longer period of time.
Now, I will admit I had a date last night with a 24 yr old that was absolutely the best I have had in the past six months. Super sweet girl (like almost too nice), great all natural body, would absolutely snap necks in the mall and she showed up dressed to fuck with zero prompting. Will I see her again? Already got it set for Tuesday or Wednesday according to her work schedule. Date length 2 hours. Ppm 400 and it will go down to 300.
By comparison, Friday I had a 5+ hour date with a 36 yr old, who is a retired pro that was like starring in an unscripted porno except nobody was acting, she's just that sexual. Same ppm.
Market price vs preference

Even if you prefer 35 year olds to 25 year olds, you shouldn't pay more than market price, and market price for older should always be lower than younger.
As someone else stated, women know this too. Hell, they may even know it better than we do since our culture puts a much higher value on youth and beauty for women for things more than sex. Look at actresses who have incredible careers in their 20's, then fall off a cliff and can barely find work once they hit over 30. Sure, some of them, the very best of them, the Scarlett Johannssens and the like continue to find success as they age, but there is a reason actresses complain about jobs vanishing once they get over 35. It's unfair, but it's reality.
Tl; dr Don't pay over market price just because you have preference. You should still be able to get your preference at market price.

We agree on a lot of things in this little bowl we dabble in, but the fact is the girls / women are the ones who say yes or no based on what they will accept. You haven't considered a few things that affect the "market price". Such as "fat tax", "ugly tax", "married tax", "hosting tax", "distance tax" or the decuctions from the "market" such as "looks like Brad Pitt deduction", "looks like George Clooney deduction", "lives in a penthouse suite in Buckhead deduction". Age is not the marker for a price judgement, it's our perception of sex appeal. Example- I'll gladly pay more for a brand named box of Kelloggs fruit loops over the no name less tasty store brand. Even though the basic ingredients are identical.
