Depending on your rideshare driver, they may be savy enough to get the kickback pretty much any taxi driver is going to have. You also might have a bit of trouble finding a driver willing to take you there.

1) If you're staying at the southern end, unless you're at NoMad, you won't have an issue in terms of security at the elevators. But more and more hotels are installing sensors that require you to have a room key to actually go up. Linq has them, and MGM's announced they're going to start putting them in their properties. So you may want to check the hotel when you get there.

2) the brothels are expensive no matter what. Sure you can haggle, but you'll usually wind up paying more for less service than a regular escort. So don't worry about how you get there.

You should be OK at most hotels if she's not dressed too trashy. Have her meet you at a bar or in the lobby, she may not be able to get to the elevators at some hotels on her own. I know nothing about the brothels or Latina houses.
