I'm not sure what the business model is, but they rotate quite frequently. My guess is when business is struggling they get a hottie to generate buzz then send them on their way, either to another slow business or back to the HQ which I imagine is somewhere in NY. The long term NOVA ladies at the establishment tends to be these mercy moms you speak of. It's a bold and opinionated statement, but NOVA is more or less where these spinners go to retire. Maybe you went on an off day, but it wouldn't surprise me if she vanished. Uncovering a gem like zoey is gold and if outsiders taught us anything, nothing gold can stay.
