Have you really given that much thought?
That's a lot of work, but it seems like the effort completely breaks down if the SB is LE. I know that people like to say that LE usually won't do a sting as outcall, but some of your effort is for someone specifically targeting you and if LE wants you and not a general sting then there is no reason your SB can't be undercover LE. I'd also be concerned about getting pulled over with a fake tag. They will take you to jail for that. If you want to go that route then more power to you, I'm only suggesting that there is still a fairly easy way for you to get caught.
For LE to "specifically" target one individual with a sting using a SB as an undercover. Never ever going to happen. There are waaaaaayyyyy too many variables to even consider that as a possibility. Here's why:
First they'd have to create a SB profile on whatever site, then they'd have to hope and pray that their "target" was even interested in said profile. You see where I'm headed?
The fake tag would get you in more hot water than anything, since LE has tag readers in use all over town.

Tag readers are everywhere these days.
Why would I get pulled over w / a fake tag? How can LE tell it's not good? They may run a fascist state down in Georgia, but not where I'm from. Ideally, I put the tag on in the next door parking lot. Is it a crime to have a vehicle sitting on private property with an improper tag? Or even no tag? I'd think so. There are lots of solutions to this problem. Did you read the Steve Jobsbook? He *never* had his car tagged. He did this by getting a new Mercedes every 6 months, b / c California has a deal where you can have your paper registration for that long. LE doesn't check this stuff. I have a friend who has a license plate flipper. Pushes a button on the dash and the real one is out, pushes again and the sugar one is out.
LE has cameras on their vehicles that scan your plate and almost instantly they get a signal if something is wrong, I got pulled over in my truck because I had the tailgate dropped hauling some plywood and the reader couldn't see my tag, the officer told me what had happened, apologized for the trouble and we went on our merry way. These cameras are in use all over Ga, I haven't seen them elsewhere. Anything that conceals / decieves the identity of ownership of a vehicle is going to be considered illegal by 99.9% of LE.
A mechanical tag flipper? That guy needs to find a different hobby if he's that paranoid. Maybe HMSS is looking for a Bond replacement.
