I understand why some ask for deposits
There are people who book multiple hotel rooms for the same time in Vegas, then cancel all but one. I suspect there are also guys who book with multiple girls, then cancel all but one on short notice. No-shows or late cancellations are a legit problem. In Vegas, I think some of those are tourists who gambled away their hooker money and could no longer afford the appointment. And Vegas attracts men who are just as scammy as the women. One no-show too many and they get annoyed and start asking for deposits. Some only ask for deposits for outcall, some only for longer sessions. I appreciate the ones who just ask for you to send an Uber / Lyft as a sign of good faith.
Because of the law, there's not a good solution to the problem. Given the situation, ask yourself what you would do in their position and wanted to protect yourself and could afford to say no to the prospective clients who raise the most red flags.
