I'm just saying that the old expectations are not reasonable right now. For most of us the analogy of the butcher shop includes this fact. There is no other good quality butcher shop available. The only options are 1) wait. 2) try the soybean burger as an alternative. Personally. I'll wait.
My guess is that you as a seasoned and savvy senior have plenty of other options. For those of us that don't. What should we do if we want a fit and attractive provider? There's plenty of overweight or out-of-shape providers with huge racks advertising every hour. Not my thing. And there are issues with them. I'll stay away from the vegan burgers and await the porterhouse.
The providers I mentioned on my earlier post don't have bad reviews where they up charge or don't look like the photos or have hygiene issues. The high quality providers are busy because they are high quality. It used to be that merited higher fees. Now it merits higher fees and restricted availability. I completely understand and respect their decisions. And I will wait.
