Fajitas are too delicious to pin down to one area / inventor. I'm sure it's one of those things that has been going on since before recorded history, let alone since before Texas was a thing.

And even if it was recorded, it's not as if nobody else could come up with the idea to fry up some peppers and onions with meat. That's just too good to go unnoticed.
