Any businesses like these that serve the public are subject to inspection and LE visits without notice. If a monger gets caught inside during a surprise visit, they can feign ignorance and innocence but LE will put them through the grinder before releasing them. If they get caught mid-stroke, then that's a much higher level of LE-induced pain. As a last resort, try to visit at a time when a surprise visit is less likely.
It's also better to avoid ACS, LCS, and agencies, all of which usually operate from apartments. While LE needs a warrant before they can gain entry, those are still potentially on the Anti-Trafficking radar. Your safest bet would be to patronize well-reviewed indies. Please note that I said safest, not best. Your particular mongering tastes will determine your personal risk-reward calculation.

How about just don't go at all. Then you don't have to worry about it

Setting up a motel sting requires a bit of extra logistics because more manpower is needed to ensure officer safety, transport arrestees, and deal with other possible issues like someone who has an outstanding warrant or is in possession of drugs.
It's not a hugely heavy lift, but it's enough that there's a built-in incentive to make it a one-off operation (that can be rolled out when needed) rather than an ongoing thing. Also, because they nearly always bag a significant number of fish, there's really no reason to change the model.
That means you're more at risk seeing a provider who has little or no ad history, and no reviews (from credible sources). For a Listcrawler ad, scrolling down and clicking on "More Pics" takes you to a page where you can see any previous ads on that site. If all you see is a day or two of ads, that's a red flag. If it's another ad site, try a web search for the phone number, or an image search for the pics. And, of course, check the local forums for info.
It's true that areas that are relatively "dry" will have more mongers willing to jump at the bait, but doing so is a high-risk proposition. It's also true that many mongers think that they're sting-savvy enough to stay out of trouble. What they need to realize is that the threshold for getting arrested in a sting is rather low. If you simply show up at the door, LEO can use that fact + the fact that you responded to an ad (clearly advertising sexual services) to support the arrest. Even if you were careful not to be explicit on the phone or in text messages, and even if you don't say anything incriminating in person, they're likely to cop (pun intended) a "tell it to the judge" attitude and slap the cuffs on. Some might think they could claim the arrest was unlawful, but that's a hard case to make and you'll have to hire a lawyer and go to court, no matter what. And, of course, everything will be excruciatingly public!
The only safe and sensible practice is to think with the big head and never take the bait. And also important to remember that, once you've bitten down on the hook, you're unlikely to be able to shake it out.
