I was doing some cleaning at my desk today.
I have instant Kraft Mac and Cheese, microwaveable Chunky Chicken and Dumplings. Some say best before January 2020.
We're not talking 5-15 years overdue.
I'm thinking the Mac and Cheese, since it's perishable noodles, just toss them?
The Chunky is vacuum packed in the aluminium lid. Maybe 15 months won't kill me.
Crackers, even unopened, back from 2019, went into the compost bin.
In this eat and go world, I would put these in my desk. This came pre-pandemic, and of course the world went upside down.
Oh yes, two unopened cans of Spam in my desk, too. How much time after the pull date would you give those?
Pickled olives, unopened. Those last forever.

A trained taster might be able to tell it is older, but I doubt it. The Kraft M and C. You didn't say how it is packed. If it is a can or a flexible foil pouch. Perfectly safe. Same pasteurizing as the Chunky. If it is dry noodles in a box. It will last forever.
Same technology as canning or Army rations. They are safe forever basically. The taste and texture will degrade long before it goes bad from a microbe load. Spam. Well, it is terrible the day they pack it, but it won't go dangerous in the can. The texture will change over the years.

The Mac And Cheese is a Styrofoam type of cup, with a vacuum packed thin plastic cover that you peel off. There is a small cheese powder packet on the inside. The noodles are indeed dry. So, the dry noodles are vacuum packed, but its Styrofoam or paper-like container, is nowhere near as "impermeable" as the metal Chunky or Spam cans.

[/QUOTE]I've eaten MREs that were at least 25 years old. I also came across a case of them in a surplus store where the case label indicated they had been stored in Vietnam. This was around 2005 so those MREs were more than thirty years old.
Some foreign militaries would have rations with tinned (later in a retort pouch) bread that was astonishingly good. I've eaten some of those which were dated from the 1950's with no apparent damage.
Don't ask how I know all this.
