The only way to be 100% certain that she is not a LEO is to never make any overt arrangement to pay for anything sexual. Donations for time are completely legal, but the moment you say you'll give her an extra 20 to swallow, you can be arrested just for showing up. No money has to change hands or anything like that it is the agreement that is illegal.
