You can use a fake display name in Uber, in the app click the head in the top right corner and update the name. If you try to request an Uber and the app notices you're far from the pickup location it will ask you if you're getting a ride for someone else. Just give the SB's name so the driver can know they're picking up a girl.

What do you make of that? Did you confirm that the Uber indeed picked up and dropped off somebody? Did you see who it was? Did this person just wander around after you said no and eventually made their way back on their own?

They figure it's almost impossible to get guys to send them $300 in one shot in exchange for nothing, but if they can get $10 at a time, they can string a guy along enough to eventually get a sizable amount anyway. Sunk cost psychology is a real thing.
It sounds like there's a part of you still wondering if you should have sent what she requested, but the request is nonsensical. Had you sent the money, she would have either ghosted you or had some emergency happen to keep the scam going a bit longer.
