So you can't really escape it.
In my case, I was acting reasonably and in good faith to do the right thing. I insisted that everything be handled above board on supporting the kid and she freaked out and absconded. According to my attorneys even if she came back later and asked for child support there was a pretty low upper limit on how much the courts would award her. Given that this all happened quite some time ago my liability is very limited and I don't worry much about it.
Two additional things: about a year after she absconded I hired a skip tracer to track her down and he easily found her, I was able to do a document request from the state she was in and get a copy of the birth certificate. No father was identified on the birth certificate. The other thing was some months later I spoke to another provider who knew her well and she filled me in on some salacious details -- mainly that she was hitting up several customers and a couple of boyfriends for money as well, and several of them were still paying her as of that time. I helpfully passed on the information to that provider so she could helpfully pass that information onto her other victims.
So she was a filthy scammer.

Having said that, if someone serious and savvy is after you even a burner phone isn't going to be 100% secure. Your best bet is to never turn on the burner at home or work and only turn it on and use it someplace public and crowded. Also frequently replace your burner phone (every six months is a good reference point).
These days with so much phone spam and scammery there are lots of legit reasons to have a burner.

I use a Google Voice number linked to a burner Google account. You can access it solely from a web browser via guest / incognito mode, or you can put the GV app on your phone and link the account. If you link it to your phone and you have a significant other, turn off notifications on lock screen so that incoming messages can't be seen without unlocking the phone. Use a difficult security pattern or pin code. Fingerprint unlock is not optimal because your finger can be "borrowed" while you're sleeping.

If / when your wife finds it (and no wife, no matter how snoopy, will rifle through your dirty toolbox in the back of your truck) tell her you found it alongside the road when you had to fix a flat last year and tossed it in the toolbox. If it can't turn on there isn't much she can do about the phone.
And it goes without saying use a separate passcode (and not a fingerprint or facial recognition) to unlock the phone. And make sure it isn't a passcode that she can possibly guess.

I was driving North on 12th Avenue, approaching Jackson. I made a left turn West on Jackson Street. It was 3:00 in the morning. A block behind me on 12th was a taxi cab driver. He was driving pretty slow. Yet, I was in the left lane, signaling to turn left. This cab driver still got behind me, even though he had ample opportunity to change to the right lane. So, the light turns green, and it just happened to be, two cars were driving South on 12th, heading to the Dr. Jose Real Bridge. So, I had to wait for them to go by. Well, the cab driver then finally moves to the right lane, and passes around me. He actually stared at me as he drove by! No, you had plenty of opportunity to change lanes, a good block or two back. You saw me signal to turn left. Why you couldn't just move to the right lane earlier is beyond me. What the hell are you staring me down for?
I was going South in 5th Avenue, and turning left on Cherry Street, up the hill heading East. I was in the one left turn lane. There were pedestrians crossing, so of course I stopped and let them by. Right behind me, was a taxi cab driver, who is honking at me, and then he proceeds to go on the right of me, out of the left turn lane, and zips past me, and goes up Cherry Street. And, he stared me down as he passed me. What did he want me to do, run pedestrians over? Why do taxi cab drivers act like this?
