They see your phone number (hopefully, you are using a burner phone for texting) and possibly other things (a username that has part of your last name in it). Worse, if the provider gets busted, the cops have it too.
I'll use Cashapp for UTRs I've seen for a while, but it's reserved for a special couple of people. Strictly cash, for the rest.
