You make some good points about the risks of this hobby, especially diseases (!). But let me comment on hobby phones.
Basically a hobby phone is essential if you want to remain anonymous, not only from LE but from unscrupulous providers as well. Check out this story.

I bought a hobby phone that looks much like my home phone, so if the SO sees it, it may pass for my home phone. If see can tell that it's not the home phone, I can tell her I found it at work, and wanted to try the speed dial to see if I can find the owner. (BTW, use the password feature so she and LE can't see anything incriminating.)
I'm forgetful, but I leave it in my briefcase (or man bag for you metrosexuals) or a special compartment in the car or anywhere you keep you hobby stash (covers, lotions, etc.). I remember to turn it off after the visit, mainly to save battery life, as well as the surprise call / text.
I hear good things about Google voice, but I like my phones low tech. Also, I thought I read that your phone records still have these calls, not a good thing if you're investigated by LE or a divorce lawyer.
Your point about not parking in front of her place is key. I believe that's how the Zumba girl found out the identities of her clients.
