Up front pay / Up front tip
You know it's interesting. In our shop Mei started out with the idea of collecting the house fee up front, but now, for regulars, at least half the time, we collect everything at the end. Sometimes, if it is busy and the customer is waiting, I'll collect up front just to save time. But we never ever have payment issues. The first month we opened we had a few knuckleheads who tried for extras and then after striking out left zero tip. We try very hard to make sure the customer knows we are legit so there is no misunderstanding.
So to respond to your point, Blue, I bet a few customers have burned them. I wonder if they have a LOT of dissatisfied customers who then gripe and refuse to pay.
