I admit that I'm not the swiftest at times. Could someone explain how they go about scamming and taking the cash when all you give them is the 800 number on the back of the card and NOT the card number. What am I missing?

The old buy a pre-loaded card and give me the card number so I can verify the funds scam. And as always if it looks too good to be true then it usually isn't true.
